Moreover, it is a delicious and quickest teak-out lunch or dinner.

MAKE THE SUPERB FRIED RICE NOODLES WITH HAPPOSAI LEFTOVERS

Ingredients
  

  • HAPPOSAI or your stir-fried vegetables leftovers
  • 8 oz dried thick rice noodles

Additional Seasonings

  • 2 tbsp water
  • 2 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp Hoisin sauce or miso paste
  • ½ TSP Chinese chicken soup powder (or regular chicken soup powder)
  • ½ tbsp sugar *you don't need when using Hoisin sauce

Instructions

  • Soak rice noodles in cold water for at least 20 minutes until tender.
  • Microwave the stir-fried leftovers for about 1-2 minutes.
  • Combine "the additional seasoning" ingredients
  • Transfer the warm stir-fry in a non-stick skillet, and add the rice noodles and the combined additional seasonings.
  • Stir the ingredients over medium heat until the sauce gets cooked, then, cover a lid. Reduce the heat to medium or medium-low, and continue cooking until the noodles absorb the sauce.
  • Uncover, and stir the noodles. Adjust the taste and serve.
