Ingredients
  

  • ¼ green cabbage
  • 1 handful spinach
  • 1 cucumber (large or small)
  • ½ apple, thinly sliced
  • cup minced cilantro
  • ¼ cup chopped pecans/almonds/walnuts
  • 2 tbsp toasted sesame oil
  • salt

COLESLAW DRESSING

  • ¼ cup Japanese Mayo *KEWPIE
  • 4 tbsp extra virgin olive oil *Or you can change 2 tbsp toasted sesame oil
  • 1 tbsp vinegar or fresh squeezed lemon juice
  • 1 tbsp whole grain mustard
  • 1-2 tbsp sugar or honey
  • freshly ground pepper
  • hot sauce *optionally

Instructions
 

  • Shred or chop green cabbage. Chop spinach if needed. Sprinkle a pinch of salt. Let them sit for about 10 minutes.
  • Meanwhile, thinly slice the cucumber and sprinkle with a pinch of salt. Let the sliced cucumber sit for about 10 minutes.
    Gently wash, remove salt, and squeeze with your hands to remove excess water.
    Add to cabbage and spinach.
  • Add thinly sliced apples and chopped cilantro.
    Combine well.
  • Make the coleslaw dressing. In a bow, add the ingredients and mix well.
    Pour over to the mixed vegetables and combine well.
  • Add chopped nuts and toasted sesame seeds. Mix well.
  • Let the coleslaw marinated for the minimum 30 minutes in a fridge and adjust flavors.
